Potato Wedges – “Papas Bravas”

Try these delicious spicy potato wedges with guacamole and mango pico de gallo. A spin on the classic tapas that will make you go hungry!

Ingredients

For the papas:

  • 5 Potatoes
  • 2 tbsp. Chili Powder
  • 2 tbsp. Chili Flakes
  • Olive Oil
  • Salt and Pepper

For the avocado sauce:

  • 4 Avocados
  • 1 Lime
  • 1 cup Lemon Juice
  • Olive Oil
  • Salt and Pepper

For the mango pico de gallo:

  • 1 Red Pepper
  • 1 Onion
  • 1/2 Mango
  • 1 Tomato
  • 1 fresh sprig of Cilantro
  • 1/2 Lime
  • Olive Oil
  • Salt and Pepper

Directions

For the papas:

  1. Boil the potatoes for 15 mins. Let them cool down.
  2. Cut the potatoes in wedges, place them on a baking tray with plenty of olive oil, salt, pepper, chili powder and chili flakes.
  3. Bake for about 15 mins at 375°F, until they turn a golden brown color.

For the avocado sauce:

  1. Incorporate all the ingredients in a blender, process until smooth.

For the mango pico de gallo:

  1. Dice the tomato, bell pepper, onion, mango and mix them in a bowl.
  2. Chop the cilantro and incorporate.
  3. Season with lime, salt, pepper and olive oil.

Pro Tips to get crunchy potato wedges

Make them spicier by doubling the amount of spices. Switch it up with different types of powdered chilies for different combinations of flavor.
